We had such a great time working on the nursery last week with a few of the children, I wanted to share some pics so you can catch the vision that we're a part of:
We had an excess of cabbages, so our friend researched how to dehydrate them into "cabbage chips." She used a combination of the following recipes (click pdf document below):
The yummy cabbage chips were wonderful!
(BTW, this recipe can also be used for kale, spinach, chard, collard greens, beet greens, sorrell and arugula.

On Friday, we were approaching the last day to enjoy a substantial homeschool discount at our local water park. I could not recruit a last minute energetic adult to assist with managing all children in a potentially risky environment, nor did I have a budget to purchase tickets for our entire family. So, I had pretty much resolved that I'd only take a few of our older children, and arrange a separate outing for the "littles" (6 and younger.) As much as I wanted to spare the disappointment of the younger children, it is part of life to experience this unfavorable emotion at times.
My resolution was for our children 6 and younger (with the exception of MaYah), to enjoy visiting our friend and watch movies, bake brownies and make scrapbooks. This allowed for me to relax and take our oldest 4 children out for a waterpark excursion (see pics below.)
Our friend makes this simple, and delicious, salad with just a few ingredients. Aside from a limited investment to begin, it can also be made in bulk and it will store well in the fridge...YEAH!
This was just a small sampling of the leftovers from our Agriculture Co-Op....The majority was grown or gathered locally (all but the oranges)
